Trevor Thorpe

Trevor Thorpe got his start behind bars with the House of Blues in Las Vegas, San Diego and Hollywood venues and eventually began working at the lauded Las Vegas Noir Bar where he started his craft cocktail journey. A journey which brought him to Portland where he has developed multiple cocktails, menus and complete bar programs and operations for such bars as Interurban, Fireside Lounge and multiple properties within the ChefStable family. With Rhinestone, Trevor Thorpe combines his passion for cocktails and cowboy shirts to create a selection of unexpected new favorites and reimagined classics. Each drink begs the question, “Would Elvis drink this?” The answer is yes.

Graham Chaney

Born and raised in the Willamette Valley, Graham was drawn to cooking at an early age helping his mother in the family kitchen. After spending a couple years cooking  in the San Francisco Bay area, he moved back to Portland and has been leading teams in various distinguished kitchens for nearly 2 decades, most recently as Executive Chef of Stammisch, Portland’s leading German restaurant and beer hall. At Rhinestone he will draw inspiration from southwestern fare and late night drive-thru cravings to present an array of whimsical indulgences that will satiate any craving.
